Lemon & Herb Baked Chicken

A delicious and super easy recipe to make that's packed full of flavour. Enjoy with some steamed greens and rice for a complete meal.

Serves 4


  • Large pack of chicken drumsticks

  • 1/4 cup olive oil

  • 2 Tbsp mixed herbs

  • 2 tsp garlic powder

  • 2 tsp salt, divided

  • 1/2 tsp black pepper

  • 1/2 cup chicken bone broth or stock

  • 2 Tbsp minced garlic (6 cloves)

  • 1 Tbsp lemon zest

  • 2 Tbsp lemon juice

  • 1 Tbsp brown sugar

  • 1 lemon cut into slices


  1. Heat the oven to 180 degrees Celsius

  2. In a small bowl mix the olive oil, herbs, garlic powder, 1 tsp salt and pepper to create a marinade. Coat the chicken in the marinade in an oven proof dish.

  3. Using the same bowl mix together the stock, garlic, lemon zest, lemon juice, sugar and remaining 1 tsp salt. Pour over the chicken.

  4. Arrange the lemon slices between the drumsticks and bake for 30-45 minutes or until chicken is cooked through.

  5. Serve with some steamed veggies and rice. This has an amazing sauce that tastes amazing on some soaked rice.
