I love making slaw from scratch at home as there's no right or wrong way to do it, and you can add any ingredients from the fridge. The best thing about this salad is the Japanese sesame dressing!
Serves 4
Ingredients
Half a cabbage
3-5 leaves of silverbeet or kale
3 stalks of celery
2 grated carrot
Half a cucumber, finely diced
Large bunch of parsley, finely chopped
1/4 cup of sunflower seeds
For the dressing
1.5 Tbsp tamari or soy sauce
1.5 Tbsp rice wine vinegar
1.5 Tbsp mayonnaise
1 Tbsp sesame oil
2 tsp sesame seeds
Method
Chop all salad ingredients, except sunflower seeds up finely and place in a large salad bowl. Add the sunflower seeds.
In a blender or nutribullet, blend all of the dressing ingredients until completely blended and smooth.
Pour the dressing over the salad and mix well. Serve as a side to your main meal.
