Chicken Pesto Pasta

This is a hit with the kids (and adults haha) and I often tell my son that it's 'the Hulk' pasta which will make him super strong :P It's loaded with heaps of veggies, and the pesto hides this from the kids so it's got some nutrients packed into it. I use GF pasta.

Serves 4


Ingredients

  • 400g spiral pasta (I used GF)

  • 600g chicken breast, diced in small pieces

  • 1 Tbsp extra virgin olive oil

  • 1 courgette, diced

  • 6 button mushrooms, finely chopped

  • 1 onion, finely diced

  • 3 garlic cloves, minced

  • Half a leek, finely diced

  • 1 medium tup of Genoese pesto sauce

Method

  1. Boil pasta according to packet instructions.

  2. Heat a large frypan with olive oil and chicken and cook for 5-8 minutes or until cooked through. Put in a large bowl and set aside.

  3. Put frypan back on heat with some more olive oil add onion, leeks and garlic and cook for 2 mins.

  4. Add the remaining veggies and cook for a further 3 mins until all soft.

  5. Add the chicken back to the pan, along with the cooked pasta and pesto, mixing through well.

  6. Season with salt and pepper and serve.
