This is a hit with the kids (and adults haha) and I often tell my son that it's 'the Hulk' pasta which will make him super strong :P It's loaded with heaps of veggies, and the pesto hides this from the kids so it's got some nutrients packed into it. I use GF pasta.
Serves 4
Ingredients
400g spiral pasta (I used GF)
600g chicken breast, diced in small pieces
1 Tbsp extra virgin olive oil
1 courgette, diced
6 button mushrooms, finely chopped
1 onion, finely diced
3 garlic cloves, minced
Half a leek, finely diced
1 medium tup of Genoese pesto sauce
Method
Boil pasta according to packet instructions.
Heat a large frypan with olive oil and chicken and cook for 5-8 minutes or until cooked through. Put in a large bowl and set aside.
Put frypan back on heat with some more olive oil add onion, leeks and garlic and cook for 2 mins.
Add the remaining veggies and cook for a further 3 mins until all soft.
Add the chicken back to the pan, along with the cooked pasta and pesto, mixing through well.
Season with salt and pepper and serve.
