Chicken Liver Pate

This is a delicious chicken liver pate recipe that me and my family eat by the spoonful and it doesn't tend to last very long. Liver is a nutrient powerhouse and provides us with super high doses of nutrients like vitamin A, B12, zinc, iron and selenium.


Serves 10


Ingredients

  • Tub of chicken livers (organic preferred)

  • 200g bacon

  • 1 large onion

  • 3 garlic cloves

  • Decent handful of fresh herbs (or 1 Tbsp of dried herbs)

  • 1 cup bone broth or stock

  • 1/3 cup red wine, optional


Method

  1. Cut up onion and garlic and cook on an oiled pan on medium heat.

  2. Chop up bacon and livers and add these to the pan and cook until livers are almost cooked through

  3. Add herbs, decent pinch of salt and a good crack of pepper and let it cook for a minute or so before adding in the broth and wine (if using).

  4. When the sauce looks thick, take it off the heat and let it cool before adding to your food processor and whizzing it up until fully blended and smooth.

  5. Serve with some veggie sticks, rice crackers or have by the spoonful.
