Vietnamese Beef Rice Bowl

This is SUCH a flavourful recipe that was a hit with both the kids and the husband.

Serves 4


Ingredients

  • 1 onion, thinly sliced

  • 1 Tbsp ginger, grated

  • 1 Tbsp olive oil

  • 600g beef mince

  • 2 Tbsp sweet chilli soy dressing

  • 2 Tbsp chopped peanuts

  • 1 tsp fish sauce

  • 1 carrot, grated

  • 2 baby bok choy

  • 200g sliced cabbage

  • 1.5 Tbsp vinegar

  • 1 pinch chilli flakes, optional

  • 300g jasmine rice

  • 1 Tbsp sweet chilli soy dressing

  • 4 Tbsp mayonnaise (use my recipe here)

Directions

  1. Rinse and drain the rice and add to a pot with approx 2 and 1/4 cups of boiling water and a decent pinch of salt. Cover with a lid and bring to the boil. Once boiled, drop to the lowest heat and cook for 12 mins. Turn the heat off and leave the lid on and steam for 5 mins.

  2. Prep veggies - slice onion, grate ginger, grate carrot, thinly slice bok choy, slice cabbage.

  3. Heat oil in a frypan on medium heat. Cook onion for 2-3 minutes until starting to soften.

  4. Add ginger and beef and cook for about 7 minutes, until just cooked through.

  5. Stir through the first measure of the sweet chilli soy dressing, peanuts and fish sauce.

  6. Remove from heat and season to taste with fish sauce and pepper and keep warm.

  7. Whisk together the second measure of sweet chilli soy dressing and mayonnaise in a small bowl and set aside.

  8. Toss all the veggies (carrot, cabbage, bok choy) in a bowl with the vinegar and chilli flakes (if using).

  9. To serve, spoon rice into bowls, and top with beef, veggies and sweet chilli mayo.
