Kingfish Thai Red Curry

Fish is a staple food in our house throughout the summer months when we have an abundance, so we often have a freezer full to look forward to over the winter months. This is a spicy one, so unless your kids like spice, this may be reserved for adults only.

Serves 4


  • 2 large kingfish fillets (600g)

  • 2 garlic cloves

  • 2 Tbsp red Thai curry paste

  • 4-6 mushrooms, diced

  • 1-2 carrots, diced

  • 1 Tbsp fish sauce

  • Can coconut cream or milk

  • Rice for serving


  1. Heat oil in a large fry pan and fry off garlic and curry paste for a minute until fragrant

  2. Add in coconut cream and stir the curry paste in

  3. Add fish and slowly mix together

  4. Add in vegetables and let simmer until fish is cooked through, or about 5-6 minutes

  5. Put onto low heat and let simmer for 10 minutes. Season with salt and pepper

  6. Serve on top of rice and garnish with coriander.
