Homemade Butter Chicken

Most Kiwi's love a good Butter Chicken, but have you tried making it from scratch at home? It's surprisingly easy and super delicious! Don't bother with the jars of sauces from the supermarket and give this recipe a go.

Serves 4


  • 6 Tbsp butter

  • 900g boneless chicken thighs , diced

  • 1 onion, diced

  • 3 garlic cloves, cushed

  • 1 Tbsp garam masala

  • 1 Tbsp fresh ginger, grated

  • 1/2 - 1 tsp chilli powder

  • 1 tsp ground cumin

  • 1/2 tsp cayenne pepper

  • 1 can chopped tomatoes

  • 2 cups cream (or coconut cream)

  • Salt pepper

  • Rice for serving


  1. Brown chicken in 2 Tbsp of butter in large pan on medium heat, it doesn’t have to be cooked through. Set aside

  2. Melt another 2 Tbsp butter in the pan and cook the onion until soft. Add the garlic, Garam masala, ginger, chilli, cumin and cayenne pepper and cook for a minute until fragrant before adding the tomatoes.

  3. Bring the mixture to a simmer and cook for 5 mins before adding the cream. Add in chicken and let simmer for another 10-15 mins.

  4. Stir in the remaining 2 Tbsp butter and season with salt and pepper to taste

  5. Garnish with some coriander and serve with rice and veggies.
