Healthy Loaded Nacho Mince

A versatile and super easy staple in our kitchen that we make at least once a week. Can be used for nachos, Bolognese, burritos or whatever your mince dishes are

Healthy Loaded Nacho Mince

Serves 6-7


  • 1 Tbsp extra virgin olive oil

  • 1 onion, diced

  • 1 carrot, grated

  • 1 courgette, grated

  • 6-7 mushrooms, diced

  • 1 Tbsp crushed garlic (2-3 garlic cloves)

  • 3 Tbsp tomato paste

  • 900g mince (I used beef, or you can use a combo)

  • Can kidney beans

  • Can chopped tomatoes

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp turmeric

  • 2 tsp dried oregano

  • 2 Tbsp Mexican seasoning

  • Salt and pepper

  • 1 cup chicken broth (or stock)

  • 1 Tbsp Tamari (GF soy sauce)

  • 1 tsp Worcestershire sauce


  1. Heat a large frypan on medium heat and add the olive oil.

  2. Dice up all the veggies and start by frying the onion, carrot, courgette, mushrooms and garlic until softened.

  3. Add in tomato paste and spices and fry until fragrant. Add the mince and cook for another couple of minutes, breaking the mince up in the pan.

  4. Add the kidney beans, canned tomatoes, chicken broth, tamari and Worcestershire sauces.

  5. Leave to simmer for 20 minutes, stirring every 5 minutes to combine the sauce into the mince mixture. The simmering is where the mince gets its flavour, so the longer you can simmer, the better.

  6. Serve with fresh salad, nachos, spaghetti or your choice.
